The problem is compounded for companies with multiple lines of business and multiple reporting needs, as each requires different data sets. You may have the information you need to perform a Post-Close QC analysis of loans, but will that help you answer questions about HMDA compliance? Not likely.
Its easy to say that we should simply extract all the data on every form, but that is the same as buying every tool ever invented. Do you really need a cement mixer if you live in an apartment?

Would you try and build your own Allen wrench set? Even the most die-hard do-it-yourself person knows better than that. You buy the tools you need, freeing you to solve your building needs.
